Pivot and unpivot in Excel Power Query are two features that allow you to organize data in a way that makes it easier to understand. Pivoting is the process of taking a set of data and rotating it to view different subsets of the data. Unpivoting is the reverse process of pivoting and takes data that has been pivoted and converts it back to its original format.
