What is the best practice for organizing cross-team projects in Teams?

Advice, please. We have our set Teams but we have many cross-team projects/work within our organization. What is the best way to have a home for these projects that need people from multiple teams? A home to post/develop files and tasks, everything you do within a normal team but with variable people. One idea was one team with everyone needed and then private channels for each project.
