In the 2nd episode of her Microsoft Teams series, Allison goes over what to consider when you are structuring your Teams and Channels. She then shows how to add a Team and Channels to that Team. In addition to this, she also talks about modifications that you can make to the Channel, such as tabs, hiding, and pinning.
